Although I happily answer general questions about Joomla, you may get quicker answers by searching the Joomla forums.

Our podcast is working great. While the full feed shows all the podcasts the page only shows the latest 25. Is there any way to have all of them show on the page or it create a second page of the older podcasts? http://www.needproject.org/index.php?option=com_content&view=category&id=14&Itemid=42

In the Paramaters page there is an option "#Items"

Set that to the number of podcasts you want to have included in your feed. I have mine set to 999.

Edit, sorry misread your post.

In the Menu item Parameters (Basic) that creates your page, change the "#Intro" option to the number of articles you want to have displayed. then in Parameters (Advanced) set the Pagination to Show or Auto, and it should allow you to go to the next page of articles.
